Chèvre Anyone?

by WiredBerries Editors — August 7, 2007

Slightly sweet with a salty undertone, goat milk is actually the milk of choice in many parts of the world. Even people who don't tolerate cow milk are often able to drink goat milk.

Now researchers are saying that goat milk is all around better based on a comparative study on the properties of goat milk compared with cow milk. Goat milk was found to help with the digestive and metabolic utilization of minerals such as iron, calcium, phosphorus, and magnesium. The research carried out at the Department of Physiology of the University of Granada also revealed that goat milk is more nutritious and has other superior properties compared with cow milk. Among these properties it helps to prevent ferropenic anemia (iron deficiency) and bone demineralization (softening of the bones).

However, goat milk is not as mild as cow milk, and for the uninitiated, it is often an acquired taste. Before you pour some on your cereal, you may want to consider these ideas for adding goat milk goodness to your diet:

  • Goat milk yogurt makes a good base for savory dips. Simply mix in your favorite herbs and spices.
  • Crumble goat cheese on a salad of romaine lettuce, pears, and pumpkin seeds.
  • Crumbled goat cheese is a delicious and rich topping for warm soups.
  • Add some kick to a vegetable sandwich by including goat cheese.
  • Soft, spreadable goat cheese is a tasty accompaniment to crusty whole grain bread or crackers and fruit.
  • Top sliced tomatoes with crumbled goat cheese and fresh basil. Drizzle with balsamic vinegar and extra virgin olive oil.
