Super Food

Tofu is a "super-food." It is high in muscle-building protein, contains a healthy dollop of omega-3 fatty acids, and unlike meat, is practically devoid of saturated fat--and what's more, it contains lots of fiber! All of this means, tofu is great for your digestive system, is heart-healthy, and keeps you lean and feeling energetic. This great dinner disk is super easy to prepare and deliciously satisfying.

Stir-Fried Tofu and Asparagus with Sweet Chili Sauce

Serves 4

1 Tbsp canola oil
1 Tbsp sesame oil
4 cloves garlic, chopped finely
1/2 inch/1cm ginger root, chopped finely
10 to 12 asparagus spears, sliced into thirds diagonally
12 baby corn cobs, sliced
6 spring onions, sliced diagonally
400 grams/14 oz. firm tofu, diced
1 Tbsp shaoxing rice wine (Chinese rice wine)
2 Tbsp tamari or soy sauce
1 Tbsp sweet chilli sauce
1 tsp black-bean sauce

1. Heat the sesame and canola oils in wok or pan, then add the garlic and ginger and stir-fry for a minute.

2. Add the spring onions, baby corn, and tofu, and stir-fry for 4 minutes.

3. Add the rice wine, tamari, black-bean sauce, and sweet chili sauce, and stir-fry for a minute or two.

4. Serve over steamed brown or basmati rice.
