Spicy and Soothing Ginger Tea

Winter is still in full swing, and there's nothing like cold, wet, dreary weather to bring on a sore throat, cold, or flu when you really don't want one. The spicy taste and heady, invigorating aroma of ginger tea is a soothing home remedy that will quickly lift your spirits as you get well. Ginger tea is not only great for when you're feeling under the weather but also for preventing indigestion after meals and especially useful for pregnant women who want to ward off morning sickness.

Ginger Tea
4 cups water
1 (2-inch) piece of fresh ginger root
Raw honey and lemon slices, to taste (optional)

In a saucepan, bring the water to a boil. Meanwhile, peel the ginger root and slice it into thin slices. Add the ginger to the boiling water. Reduce to a simmer, cover the pan and simmer for 15-20 minutes. Strain the tea. Add honey and lemon to taste.
