Fruit Salsa

Spring is finally making its way into our lives in the form of more daylight and slightly warmer, sunnier days. And even though I should just be happy with what I have, I am craving summer and even longer, warmer days. Fresh, cheery berries have begun showing up at the markets at much more affordable prices (finally!) and this fruit salsa is a great way to celebrate them. You can get creative with this recipe and add bits of whatever fruits look good on a particular day, but the best way to serve it is chilled with crunchy cinnamon pita chips.

Fruit Salsa

1 pound strawberries, diced
8 ounces raspberries, roughly chopped
1 mango, peeled and diced
2 kiwis, peeled and diced
2 Fuji apples, peeled, cored, and diced
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

In a large bowl, combine kiwi, apples, raspberries, strawberries, brown sugar, and preserves. Cover and chill in the refrigerator at least 15 minutes before serving.
