Holiday Recipes: Cranberry Orange Relish

This is one of those easy, minimal prep recipes that functions as a great appetizer for a holiday potluck. Surprisingly, I found this recipe featured on the Smuckers website. Feel free to substitute low-sugar marmalade for regular, or keep the recipe as is, if you're not concerned about the sugar content. You can also boost the nutrition in this recipe by using homemade marmalade in the place of canned. But if time is an issue, canned marmalade makes this recipe super simple.

An added bonus to this recipe: the healthful addition of cranberries. They are full of antioxidants, ward off infections (most notably, bladder infections), and may help to prevent strokes and some cancers.

What you'll need:
1-12oz bag fresh cranberries
1/2 cup orange marmalade
1/2 cup honey
1/2 cup chopped walnuts
Pinch ground cloves and ground ginger (optional)

Place cranberries and orange marmalade in microwaveable bowl and cook for 2 minutes on high. Stir halfway through cooking time. Add chopped nuts and cook for another 2 minutes. Stir in honey, nuts and spices. Allow to cool. Chill until ready to serve.

I suggest serving with crackers, pretzel sticks, or cubed bread.
