Irish Oatmeal for a Cold Winter Morning

Our St. Patrick's day week of recipes concludes with a breakfast filling enough to keep you warm and satisfied until the parade starts.

Serves 4

1 and 1/2 cups whole milk, plus more for serving
1 and 1/2 cups McCann's Irish quick-cooking oatmeal (not instant!)
Pinch salt
1 banana, sliced at serving time
1/2 cup raisins
1/2 cup dried cranberries, blueberries, or cherries
1/4 cup toasted sliced almonds
Maple syrup and/or brown sugar for serving

1. Scald milk with 2 cups of water in medium-sized saucepan.

2. Add oatmeal and salt and simmer for about 5 minutes, stirring, until thickened.

3. Stir in fruit, then cover and let rest a few minutes.

4. Serve hot with maple syrup or brown sugar and milk.
