Almost Gigi Salad

This is a recipe based on the famous Gigi salad of the Palm Restaurant. It takes a good bit of work, but is well worth it, because this salad is a meal in itself.

Serves 4


Salad

1/2 lb. string beans, cleaned, and cut into 1 inch pieces, cooked until crisp-tender, about 5 minutes
1/2 lb. medium shrimp, peeled and deveined, cooked and chopped into small pieces
1 or 2 large beefsteak tomatoes, seeded, and chopped into 1-inch pieces (no need to peel)
1 sweet onion, such as Vidalia, chopped into 1/2-inch pieces
4 slices bacon, fried until crisp, drained, then crumbled


Dressing

1/2 cup olive oil
2 Tablespoons red wine vinegar
1 Tablespoon dijon mustard
1 teaspoon salt
1/2 teaspoon pepper

1. Whisk salad dressing ingredients together. Taste for seasoning.

2. Combine string beans, shrimp, tomatoes, and onions in decorative bowl. Toss with dressing and let absorb flavors for about 1/2 hour. Just before serving, toss in bacon bits and serve.
