![]() Almost Gigi Saladby Laura Donnelly — May 18, 2007This is a recipe based on the famous Gigi salad of the Palm Restaurant. It takes a good bit of work, but is well worth it, because this salad is a meal in itself. Serves 4
1/2 lb. string beans, cleaned, and cut into 1 inch pieces, cooked until crisp-tender, about 5 minutes
1/2 cup olive oil 1. Whisk salad dressing ingredients together. Taste for seasoning. 2. Combine string beans, shrimp, tomatoes, and onions in decorative bowl. Toss with dressing and let absorb flavors for about 1/2 hour. Just before serving, toss in bacon bits and serve. Comment on this Post
