Caesar Salad

Here is my absolute favorite Caesar salad dressing recipe. It is from my friend Wendy who got it from her boyfriend who had a restaurant somewhere in Ohio. Sorry, that's the best I can do to trace the source!

Salad

One head romaine lettuce, broken into bite sized pieces
One cup croutons, preferably homemade
1/2 cup fresh grated parmesan cheese


Dressing

1 or 2 anchovies, crushed with a fork
2 teaspoons Dijon mustard
3 cloves garlic, crushed
1 Tablespoon wine vinegar
Juice of 1/2 to 1 whole lemon (this is to your personal taste)
1 teaspoon Worcestershire sauce
1/2 to 3/4 cup canola oil

1. Mix first six dressing ingredients in medium bowl, then slowly add oil, whisking until desired consistency and tartness have been reached. Add salt and pepper to taste, keeping in mind that you will be adding parmesan cheese, which is also quite salty.

2. Toss with lettuce, croutons, and cheese just before serving.
