Famous Artichoke Dip

Everyone has had some version of this dip. It's fast and easy, and you can always have the ingredients on hand in your pantry and refrigerator. If you are feeling extravagant, add 1/2 pound of jumbo lump crabmeat to it!

Makes 1 and 1/2 cups

1 can artichoke hearts, drained and coarsely chopped
1/4 cup freshly grated parmesan cheese
1/4 cup low-fat mayonnaise
1 clove garlic, minced
1 teaspoon lemon juice
1/4 teaspoon curry powder

1. Preheat oven to 350.

2. Mix all ingredients in medium-sized bowl.

3. Place in a small gratin dish or casserole (so the layer of dip is about 1-inch thick).

4. Bake for about 15 minutes or until nice and bubbly around the edges.

Serve with simple water crackers.

I am not a fan of curry powder. What would make a good substitute?
