![]() Favorite Cole Slaw with Secret Ingredientby Laura Donnelly — May 24, 2007This is my favorite cole slaw recipe to go with crab cakes or the soft-shelled crab recipes from Monday or Tuesday. It has a secret ingredient--so see if your friends can guess what it is. If you can't find ripe mango, substitute pineapple, peaches, or even diced green apple. Serves 6 to 8 1 medium-sized purple cabbage, shredded 1. In large bowl, toss cabbage, carrots, mango, and onion. Sprinkle vinegar over all and toss again. This will wilt the cabbage a bit. 2. Add mayonnaise, curry powder, Tabasco, and salt and pepper. Toss again and taste for seasoning. The curry flavor should be mild. 3. Just before serving, toss in peanuts or peanut brittle (so they stay crunchy).
