Favorite Cole Slaw with Secret Ingredient

This is my favorite cole slaw recipe to go with crab cakes or the soft-shelled crab recipes from Monday or Tuesday. It has a secret ingredient--so see if your friends can guess what it is. If you can't find ripe mango, substitute pineapple, peaches, or even diced green apple.

Serves 6 to 8

1 medium-sized purple cabbage, shredded
1 cup shredded carrot
1 mango diced
1/2 cup finely chopped red onion or scallions
1/2 to 3/4 cup low-fat mayonnaise
4 Tablespoons mild vinegar such as cider or white wine
2 Tablespoons curry powder
1 teaspoon Tabasco sauce
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 cup chopped honey roasted peanuts or peanut brittle (your secret ingredient)

1. In large bowl, toss cabbage, carrots, mango, and onion. Sprinkle vinegar over all and toss again. This will wilt the cabbage a bit.

2. Add mayonnaise, curry powder, Tabasco, and salt and pepper. Toss again and taste for seasoning. The curry flavor should be mild.

3. Just before serving, toss in peanuts or peanut brittle (so they stay crunchy).

This recipe looks fantastic! I haven't tried adding peanuts before but I am going to give it a shot. Ever considered sunflower seeds?
