My Favorite Guacamole

Our fourth herbed recipe of the week is for a guacamole that uses a generous quantity of cilantro. Avocados do have a good bit of fat, but it's healthy fat! Serve with baked tortilla chips and crudités.

Makes about 3 cups

4 very ripe avocados
4 Tablespoons fresh lime juice
1 jalapeno pepper, seeded and minced
1 garlic clove, minced
1/2 cup chopped cilantro leaves
1/2 onion, chopped
1 teaspoon salt

Mash avocados and add other ingredients. Taste for seasoning. Sometimes jalapenos can be quite hot, other times mild. I like this super spicy and limey.
