Thousand Island Dressing

This dressing is similar to Russian dressing and is also great as a sandwich spread. I can picture the LaLondes, mentioned in the introduction to salads before Monday's Green Goddess recipe, serving this dressing at their shore dinners or as an accompaniment to crispy fried pike or bass.

Makes 1 and 1/2 cups

1 cup low-fat mayonnaise
1/4 cup ketchup
1 hard-boiled egg, chopped
2 Tablespoons minced cornichons or pickle relish
1 Tablespoon minced onion
1 Tablespoon minced chives
1 Tablespoon minced fresh parsley
salt and pepper to taste

Stir all ingredients together until blended. Use immediately or cover and refrigerate indefinitely. Great on wedges of iceberg lettuce with thin slivers of red onion and cherry tomatoes.
