Rice Krispie Crackers

This is an old-fashioned recipe reminiscent of Southern cheese straws. I can't claim they are low in fat, but they are a delicious and easy nibble for your next party. Let your kids help you make them.

Makes 2-3 dozen depending on size of cracker

1 cup flour
1 cup Rice Krispies
1 cup shredded sharp cheddar cheese
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 stick (4 ounces) butter, softened

1. Preheat oven to 350.

2. Blend ingredients in bowl with your fingers until the dough comes together.

3. Roll into little balls about the size of large olives. Place on ungreased cookie sheet about 2 inches apart. Flatten each cracker with the tines of a fork, the way you would with peanut butter cookies, in a criss-cross pattern.

4. Bake for about 10 to15 minutes or until lightly golden. Let cool and store airtight until serving.

Here is a bonus recipe, or more like a quick and easy suggestion for short-notice entertaining. Serve this with Carr's Wheatmeal Crackers, they are slightly sweet and kind of like a healthy graham cracker. The sweetness goes beautifully with the pungent garlic and goat cheese.


Goat Cheese Slices with Thyme and Garlic

2 small logs or one large goat cheese log, sliced into 1-inch slices
6 cloves garlic, coarsely chopped
1 Tablespoon fresh thyme leaves, chopped or 2 teaspoons dried crumbled
1/4-1/2 cup good quality olive oil

1. Place goat cheese slices decoratively around large platter with a high rim (so olive oil doesn't slosh around).

2. Sprinkle garlic bits and thyme over the cheese. Drizzle with the olive oil.
Save leftover cheese/oil mixture (if there is any!) and use it in salad dressings.
