A Complete Summer Meal Without the Heat?

I tried a salad in Italy once that was the most delicious and easiest complete hot weather meal I have ever come across. Try this famous salad from the Italian Riviera and tell us your favorites that can be made with ingredients around the house.

Italian Tuna and White Bean Salad

Serves 2

1 can (6 oz.) good quality tuna; light is considered to be healthier than white
1 can (15.5 oz.) cannellini beans, drained and rinsed well
1/2 cup coarsely chopped sweet onion, such as Vidalia or Walla Walla
1 lemon, cut into wedges
1/4 cup chopped fresh parsley
4 Tablespoons good fruity olive oil
Salt and pepper to taste

Drain and flake the tuna. Divide between two plates. Divide white beans between the two plates. Top with lots of chopped onion, squeeze lots of lemon juice over all, then garnish with parsley and salt and pepper.
