Chipotle Aioli

Here's a recipe for Chipotle Aioli that is great with any grilled fish, a vegetable platter, a spread on sandwiches, and that new summer favorite, fish tacos.

Makes 1 cup

1 cup good quality mayonnaise
2 Tablespoons chopped chives
1 teaspoon minced garlic
1 Tablespoon fresh lime juice
1 and 1/2 teaspoons chipotle chili powder, chipotle hot sauce, or chopped canned chipotle in sauce

Combine all ingredients and taste for seasoning. If you can take more chili heat, add more chipotle!
