It was invented in 1948 by Guiseppe Cipriani, head bartender of Harry's Bar in Venice. He said he was inspired by the pink colors of a 15th Century painting by Giovanni Bellini. He was very fond of white peaches, which have a slightly pink hue when cut into or pureed. For a virgin version of the Bellini, combine the peach puree with seltzer or sparkling cider.
