Best Bellini

by Laura Donnelly — August 8, 2007

The Bellini cocktail is one of the most delicious extravagant summer drinks. It was invented in 1948 by Guiseppe Cipriani, head bartender of Harry's Bar in Venice. He said he was inspired by the pink colors of a 15th Century painting by Giovanni Bellini. He was very fond of white peaches, which have a slightly pink hue when cut into or pureed. For a virgin version of the Bellini, combine the peach puree with seltzer or sparkling cider.
