Is It a Picnic Without Chicken?

This recipe is inexpensive, easy to do ahead, and is the best picnic chicken recipe I have ever tried. Let us know what you think!

Garlicky Summer Picnic Chicken
Serves 4

3 and 1/2 lb. chicken, cut into eight pieces, or a selection of legs and thighs
4 large cloves garlic, minced
3 eggs
4 Tablespoons minced parsley
2 oz. fresh bread crumbs
1 and 1/2 oz. fresh grated parmesan cheese
3 oz. butter
4 Tbsp. olive oil
Salt and pepper

1. Combine garlic with 1 Tablespoon salt. Whisk into eggs and add some ground pepper. Pour over chicken pieces and marinate overnight.
2. Heat oven to 350 degrees. Place butter and oil in a large roasting pan that will fit the chicken pieces in one layer. Place in oven to melt.
3. Combine bread crumbs, parsley, and parmesan, and some salt and pepper. One piece at a time, coat the chicken pieces and lay gently into roasting pan. Try not to lose too much coating; turn and baste the chicken pieces. Bake for 20 minutes, turn, and bake 20 minutes more.
