Microwave Chef?

Sometimes we forget that the microwave oven is a very useful tool. Especially for cooking vegetables quickly in the summertime. Here is a basic guideline for quick cooking zucchini and summer squash: Heat one Tablespoon olive oil in uncovered bowl for one minute. Add a little bit of chopped onion and garlic and heat again uncovered for one minute. Add some julienned zucchini, in a shallow layer and microwave again for one minute, covered. Voila!
