![]() Whaddya Do with All That Zucchini?by Laura Donnelly — August 15, 2007What herbs and spices do you like to use with zucchini and summer squash? We'd like to hear about some new and creative ways to prepare this versatile, mild vegetable. We find zucchini to be particularly good with marjoram, spearmint, garlic, chives, and thyme. And of course, basil! Try grilling zucchini until well browned, drizzle with olive oil and balsamic vinegar, then sprinkle with coarsely chopped garlic (lots of it!) and chopped spearmint.
