Bachelor Cooking

Last but not least, often the most resourceful cooks are bachelors. Suddenly confronted with a date coming to dinner, the wise single gent will have some fast, impressive, and foolproof recipes in his repertoire. Try this shrimp creole.

Fast and Easy Shrimp Creole

Serves 2 (feel free to double or quadruple recipe for weekend entertaining)

2 cups fresh peeled shrimp
2 cloves garlic, minced
1 large tomato, coarsely chopped
1 stalk celery, chopped
2 Tablespoons olive oil
1/2 cup chopped red onion
1.4 cup water
1/2 teaspoon paprika
1 teaspoon fresh thyme

1. Heat one tablespoon olive oil in frying pan and fry shrimp until just pink. Set aside.

2. Heat remaining oil in frying pan and sauté garlic and onion until tender. Add tomato, celery, water, paprika, and thyme. Stir and simmer for about 5 minutes.

3. Return shrimp to pan, cover and simmer for about 5 to 10 minutes more. Serve over rice that has been flavored with a touch of coconut milk and chicken broth.
