Foolproof and Sophisticated?

The Silver Palate Cookbook was revolutionary in its time. The authors, Sheila Lukins and Julie Rosso, published this book 25 years ago and it has just been re-issued. Named after their charming little food shop on Columbus Avenue in New York City, this book is full of original, foolproof, and sophisticated recipes.

Tapenade Dip

Makes 1 and 1/2 cups

1/2 cup pitted kalamata olives
1/4 cup green olives, such as Sicilian
4 anchovies
1 garlic clove
2 Tablespoons capers
2 Tablespoons tuna, packed in oil, drained
1 Tablespoon lemon juice
1 cup fresh basil leaves
1/4 cup good olive oil
1/4 cup mayonnaise, optional

Puree first 8 ingredients, then drizzle in olive oil while still pureeing to make a fluffy sauce. Add mayonnaise if desired. This is great with crudites, on toasted baguettes, sandwiches.....
