Farewell Summer Toast

What better way to start the beautiful autumnal season than with a farewell toast to summer? Gather your girlfriends, put on a little ukulele music (or if your collection is a little low on ukulele, reggae will do), and enjoy the last of the season's summery cocktails.

Margarita

1 1/2oz. tequila
1/2 oz. triple sec
1 oz. lime or lemon juice

Rub the rim of a cocktail glass with lime or lemon rind and dip rim in salt. Combine ingredients in a cocktail shaker with ice, shake, and strain into the glass. Garnish with lime.

Pina Colada

3 oz. light rum
3 Tbsp coconut cream
3 Tbsp crushed pineapple

Combine ingredients with 2 cups of crushed ice in a blender, blend on high, and pour into a chilled glass. Garnish with a wedge of pineapple and cherry.

Mai Tai

2 oz. light rum
1 oz. triple sec
1 Tbsp orgeat or almond syrup
1 Tbsp grenadine
1 Tbsp lime juice

Pour ingredients over ice in a cocktail shaker, shake, and strain into a chilled glass contained crushed ice. Garnish with pineapple and a cherry.
