Apple-Coconut Smoothie

Our smoothie recipe of the week comes from Erin Belzer of San Rafael, CA, and includes a zesty pinch of ginger for spice and good health.

1/4 cup apple juice
1 tsp. grated coconut or 1 Tbsp. of coconut milk
1/2 banana, chunked
1 6-ounce cup vanilla yogurt
1/4 tsp. grated, peeled fresh ginger root
1/2 cup crushed ice or 2 small ice cubes

Blend all ingredients in a food processor or blender. Serves one generously.
