Fluffy Scrambled Eggs

by WiredBerries Readers — February 21, 2007

For moist and fluffy scrambled eggs, Ria McClain of Portland, OR, suggests adding a teaspoon sparkling water for every two eggs. "After you add the water, beat the eggs lightly with a whisk or fork," she advises. "When you cook the eggs on low heat, the water keeps them from drying out and the effervescence makes them bubbly and light." If this formula’s not to your liking, check out our recipe from Julia Child.
