Healthy Carrot Cake

"Carrot cake really can live up to its name and be a healthy treat, especially when you substitute applesauce for the oil listed in most recipes," says Kirsten Flynn. "Just use an exact one-for-one substitution, replacing the entire quantity of oil with the same quantity of applesauce. Because the applesauce adds sweetness, you should also adjust the sugar, reducing the amount called for in the recipe by roughly 20 percent. For even more of a health boost, replace up to half of the flour with whole-wheat flour. You'll never taste the difference!"
